Sweet potato and lentil soup with an Asian touch

This lovely soup is a perfect nutritious meal. The recipe will deliver a soft and silky soup. Sweet potato is known for it's health promoting nutrients, like fibre, B-vitamins and minerals. Red bell peppers are a good source of vitamin C and you probably know by now that lentils fit perfectly into a healthy and sustainable diet. There are so many reasons to enjoy this great recipe! It's perfect for cold authumn or winter days, but the Asian touch also adds freshness for a summer picknick.

Ingredients

For the soup

  • 1.5 kg sweet potato (orange)
  • 150 g bacon
  • 3 red bell peppers
  • 4 cloves of garlic
  • 2 red onions
  • 250 ml coconut milk
  • 1.5 l vegetable bouillon
  • 300 g brown lentils
  • 3 tbs olive oil

Instructions

  1. Dice the onions and the bell pepper and finely chop the garlic.
  2. Clean the sweet potatoes and cut them into cubes.
  3. Bring 1 litre of water to the boil and boil the lentils until almost cooked.
  4. In the mean time you can heat the oil in a large soup pan and fry the bacon, diced onion, bell pepper and garlic.
  5. When the vegetables are tender you can add the bouillon and the potato cubes.
  6. Once the sweet potato is cooked it is time to put the mixture into a blender, together with the coconut milk.
  7. Fill a soup bowl with the soup and add a good amount of cooked lentils in the middle. Finally, drizzle some coconut milk on top, and sit back and enjoy.
