Creamy Lemon bean soup with bacon and leak

The Lemon bean is a typically Dutch bean that has been kind of forgotten. But, out of sight is not always out of mind, and this soup proves it. This is a complete soup, filled with all kinds of goodies that go perfect with Lemon beans like bacon, leaks, garlic and thyme. If you like some bread with your soup you should try a hot toast with melted butter.

For the soup

  • 400 g of cooked lemon beans
  • 4 middle sized potatoes (the floury kind)
  • 150 g bacon
  • 2 large leaks, cut into thin slices and washed
  • 1 onion, diced
  • 3 cloves of garlic, chopped
  • 3 tbs thyme leaves
  • 1.5 l of stock
  • 1 tbs vinegar
  • peper and salt to taste


  1. You need a large soup pan. Start by frying about two thirds of the bacon. When the bacon starts coloring you can add two thirds of the leaks, onions, thyme and garlic and fry them together for a couple of minutes.
  2. In the meanwhile you need to peal the potatoes and gut them into cubes.
  3. Add the cubes to the pan, together with the stock. Bring the stock to a boil and let it simmer until the potatoes are done.
  4. Now it is time to add the vinegar and process the soup until it has a creamy texture. Then add the Lemon beans and bring to the boil again.
  5. Quickly fry the rest of the bacon and the leaks before serving.
  6. Sprinkle the bacon and leaks onto the soup in the bowl and bon apetit!
