Red lentil soup with spices

If you think soup of red lentils is boring then you have not tried this recipe yet. There are many variations of red lentil soup, but you have propably never tasted this one. This recipe is very simple and fast and the spices and lemon make give this soup a surprising spark. Try it for yourself!

For the soup

  • 200 g red lentils
  • 1 onion, chopped finely
  • 1 tbs olive oil
  • 1 leak, only the white part, chopped finely
  • 3 cloves of garlic, chopped
  • 1 cm of ginger root, chopped
  • 1 tbs cumin powder
  • 0.25 tsp cayenne pepper
  • 1 can of peeled tomatoes
  • 1 small lemon
  • 1 l bouillon

To serve

  • 1 tbs parsley
  • 1 slice of bread
  • a clove of garlic
  • (maple syrup)


  1. Heat the olive oil in a middel size pan. Add the onion, leak, garlic and ginger. Cook slowly.
  2. When softened, add the cumin and cayenne pepper. Cook for 1 more minute.
  3. Roughly chop the tomatoes and add them as well as the tomato juice to the pan. Add three lemon slices and the lentils. Then add the bouillon and stir well. Bring this to the boil and turn down the heat.
  4. Cook for about 30 minutes.
  5. In the mean while toast a slice of whole wheat bread and brush this roughly with a sliced clove of garlic.
  6. When the soup is cooked, check the taste. Add some salt, pepper or maple syrup to balance the taste.
  7. Sprinkle with chopped parsley and serve while hot.
