Pretty poke bowl with Wieringer beans

A poke bowl is a traditional dish from Hawaii. It is a healthy and delicious party in a bowl, usually with some type of fresh fish and all your favourite veggies. I've replaced the fish by Wieringer beans, which are quite the eye catcher on any plate. The veggies, beans and rice are brought together by a yellow english curry dressing, which matches the beans very well.

For the bowl

  • 75 g Wieringer beans (cooked)
  • handfull of young spinach
  • handfull of arugula
  • a quarter of a red bell pepper
  • 2 tbs sweet corn (canned)
  • 10 cm cucumber
  • 50 g brown rice
  • 0.5 red onion
  • 60 ml water
  • 60 ml natural vinegar
  • 50 g sugar

For the dressing

  • 1 tbs mayonaise
  • 0.5 tbs dijon mustard
  • 0.5 tbs water
  • 0.5 tsp english curry powder
  • pepper and salt


  1. Cut the onion in rings.
  2. Mix the sugar, vinegar and water untill the sugar has disolved into the liquid. Cover the onion rings with the fluid and leave it on the counter top for at least 30 minutes.
  3. Boil the brown rice untill cooked.
  4. In the mean while you can cut the bell pepper into fine strips.
  5. Cut the cucumber into good looking wedges.
  6. Wash the spinach.
  7. Mix all the ingredients for the dressing together.
  8. When the rice is cooked it is time to bring the poke bowl together. A poke bowl should be fun to eat, so the ingredients should be arranged nicely into a big bowl. Arrange the rice, Wieringer beans, sweet corn, bell pepper, cucumber, spinach and arugula in the bowl. Lay a pretty pile of the sweet and sour red onion on top and sprinkle the dressing over the bowl. You can use a bottle to sprinkle in a decorative way.
