Pizza Margherita with mushrooms

Who doesn't love pizza?! This pizza margherita is a classic one, but with a modern twist. The pizza dough is not made with flour, but with chickpeas! The chickpeas make this pizza packed with fibre and other good stuff. On top of that, I must say that this pizza margherita tastes delicious. For you guys that can not eat gluten, this pizza is gluten free!

Ingredients

For the base

  • 480 g chickpeas, cooked
  • 1 egg
  • 100 g grated cheese (any kind of cheese you like)
  • 1 tbs italian herbs
  • salt
  • pepper

For the top

  • 4 tbs tomato sauce
  • 2 mushrooms, sliced
  • 20 g leaks, finely chopped
  • 120 g grated cheese/ mozzarella
  • 1 clove of garlic, finely chopped
  • 1 tbs olive oil

Instructions

  1. Preheat the oven at 180 degree Celcius.
  2. Drain the chickpeas well. Put them in a food processor, together with the other ingredients for te base.
  3. Pulse untill the dough is well mixed and homogenous.
  4. Devide the dough in two and spread the dough on two beaking trays that are lined with baking paper. The base should be about 0.5 cm thick.
  5. Put the base in the oven for about 15 minutes. Then take them out of the oven, turn the base around (top down) and put them back in the over for about 15 minutes. Then take them out.
  6. Turn the oven to 220 degree celcius.
  7. Now it is time to top the pizza with the sauce, vegetables and finaly the cheese. Put the pizza back in the oven for about 20 minutes, or until the cheese starts to gain some color.
  8. Mix the garlic with the olive oil and sprinkle this over the hot pizza, before serving. Enjoy!
