Dik trom peas, bean mash and cod

Two types of pulses are shining in this dish: The white bean and the Dik Trom pea, which is an authentic Dutch large green pea. If you want to serve something special to guests or when you are in need of some comfort food, this is your recipe! Garlic and rosemary are a great combination with the white beans and give this dish an Italian touch. These flavours also go very well with the cod and the tender leaks make this dish complete. This recipe leads to a satisfying dish, comforting and nutritious.

For the bean puree, cod and vegetables

  • 200 g cod (2 peaces of 100 g)
  • 2 thin leaks
  • 600 g white beans (cooked)
  • 1 large stick of fresh rosemary
  • 3 cloves of garlic
  • 2 tbs olive oil
  • 1 tsp red wine vinegar
  • 100 g Dik Trom peas (cooked)
  • pepper and salt

For the rosemary oil

  • 75 ml olive oil (good quality)
  • 0.75 tsp salt
  • 1 large stick of fresh rosemary
  • 1 clove of garlic


  1. Cut the leaks into 1 to 3 centimeter towers and boil them for about 10 minutes until tender.
  2. Chop 3 cloves of garlic and finely chop the leaves of 1 stick of rosemary.
  3. Heat 2 tbs of olive oil in a sauce pan and add the garlic and rosemary to it.
  4. When they start to soften and you can smell the fragrances, you can add the white beans. Stir frequently until the beans are hot and they start to fall apart.
  5. Then add the red wine vinegar and mash the white beans into a puree. Bring to taste and add a lid to keep it warm.
  6. Now its time to prepare the rosemary oil. Process all the ingredients for the oil together in a food processor and set it asside.
  7. Prepare the cod in a frying pan. When the cod is almost ready, add the leak towers to the pan, setting them straight up, to caramelise the top and bottom.
  8. Quickly heat up the Dik Trom peas and now you're ready to prepare the plates.
  9. Arrange a good amount of puree on the plate and add the cod on top of it. Place the leak towers on the side, mixing the high and the low ones. Sprinkle the Dik Trom peas over the puree and in between the leak towers and then pour some rosemary oil over the puree and the cod. Bon apetite!
